- 3 cups organic rolled oats
- 1 1⁄2 cups chopped pecans
- 1⁄2 cup pumpkin seeds
- 1⁄3 cup brown sugar
- 3 tablespoons local honey
- 1⁄3 cup light-tasting olive oil
- 1 teaspoon vanilla extract
directions
- Measure grains, nuts, seeds, and spices into a large bowl.
- Add brown sugar, honey, and olive oil.
- Stir (I use my hands) until oil is evenly distributed through the oats.
- Spread out on large baking sheet (you can use parchment paper).
- Bake at 300 degrees for about 30-40 minutes.
- Take out of oven when granola looks toasty brown.
- Let granola cool in pan, and store in an airtight container.
