Granoola

"My granola recipe made with light-tasting olive oil adapted from several online recipes (hence the "oo" in the title). Definitely use light-tasting olive oil or final product will be bitter. A very adaptable recipe --- you can play around with the type of nuts, seeds, spices/extracts, and add-ins like dried fruits (added after baking). Try out some of the following combinations: pistachio + apricot + pumpkin seeds + cardamom; pecan + cherry + flax + nutmeg; walnut + apple + sunflower seeds + cinnamon; and, almond + mango + sesame + ginger."

  • Measure grains, nuts, seeds, and spices into a large bowl.
  • Add brown sugar, honey, and olive oil.
  • Stir (I use my hands) until oil is evenly distributed through the oats.
  • Spread out on large baking sheet (you can use parchment paper).
  • Bake at 300 degrees for about 30-40 minutes.
  • Take out of oven when granola looks toasty brown.
  • Let granola cool in pan, and store in an airtight container.
