Grape Squares

  • Squeeze grapes to separate pulp from skins.
  • Boil pulp 5 minutes, then strain to remove seeds.
  • Add skins to pulp and boil 10 minutes.
  • Combine cornstarch and sugar, mixing until well blended.
  • Add this to grape mixture along with the lemon juice, bringing to a boil again and cooking until thick.
  • Cool.
  • Heat oven to 350 degrees.
  • Mix oats, flour and brown sugar.
  • Cut in butter until crumbly.
  • Press half of this mixture into a greased 8x8-inch baking pan.
  • Spread with grape mixture.
  • Top with remaining oat mixture.
  • Bake 45 minutes until golden.

  1. I really was looking forward to this recipe, but I followed the directions exactly and it came out more like a pudding than anything you could cut into squares! It was a tasty glop, but certainly nothing I would put out for company.
     
  2. Unfortunately I missed adding the lemon juice as it wasn't in the instructions. My grape mixture had already thickened by the time I noticed it so I didn't want to add it at that point. It would have made it a little less sweet. If I were to make this again, I would use another rolled oat, flour, etc. mixture that I find very superior to this one (one that I have used for date squares).

I live near Rochester NY with my husband and our 18-year-old cat, Fluffy. It's actually Fluffy's house, but he allows us to live here as long as we pamper him and feed him generously. Our daughter, Kree, whom some of you know from Zaar, is also living with us again while she begins a new business venture in real estate. She's the one who got me hooked on Zaar and taught me to try new recipes rather than stay in the cooking rut I was in. In my free time I like to take long rides or sit by the water, both of which I find very relaxing. I also like to do counted cross-stitch and read. I dabble in photography, always looking for that elusive 'perfect' shot. I did more cooking before I started working full-time, and plan to again when I retire (still years away, but dreaming).
