"What do you do with bits and pieces of fruits and cheese in your fridge drawers? You make great salads of course ! I love creating meals from scratch using whatever is on hand and blending different textures and flavors; I rarely measure anything except when baking because then kitchen math is necessary for successful results :-) I like bosc pears best, but any firm juicy pear will be fine; do not use iceberg lettuce: it is tasteless and watery. Butter lettuce, oak leaf and frisee are a nice mix, as are romaine and endive."

  • wash lettuces in fresh cold running water and dry; tear leaves into a serving bowl.
  • wash apple & pear, seed & dice, add to bowl with lettuces.
  • gently toss salad.
  • wash celery, slice & add to bowl.
  • wash carrot & grate or julienne, add to bowl.
  • gently toss salad.
  • wash grapes, halve & add to bowl.
  • grate pecorino over bowl.
  • gently toss salad - by doing this you mix ingredients little at a time and don't "shock" them all at once.
  • make dressing in a separate bowl or squeeze bottle and add half, see how much it covers the salad and then add the rest if you wish.

ocean girl planted in the desert for the last 7 years, cook, pet-sitter, traveler, avid reader with somewhere over 1,000 books and more coming in fast, much to my hubby's dismay - myrtle the shar-pei, bobolino and pogo the cats share my life too, and occasionally get treats fresh from the oven. ONE of my biggest pet peeves is people calling a sandwich "panini": in italian, panino simply means sandwich of any type, hot or cold - 1 sandwich = 1 panino about 1970 the big new fad was toasted PANINI [plural] at our local bar or "paninoteca" - the trendy name for the place selling them back then. so if you eat panini it means you are eating several sandwiches so you must have a big appetite or you're eating tiny little ones, and not necessarily grilled nor hot!! AARRRRGH!
