12 eggs
¹⁄₂ cup all-purpose flour
1 teaspoon baking powder
¹⁄₂ teaspoon salt (optional)
1 lb monterey jack cheese, grated
3 cups small curd cottage cheese
¹⁄₂ cup butter, softened
4 ounces jalapenos, seeded and chopped
1 (4 ounce) can chilies, drained and chopped
1 (2 ounce) jar pimientos, drained and chopped
1 (7 ounce) can whole kernel corn, drained

directions

Preheat oven to 350F and butter a 13 x 9" baking pan.
Beat eggs until light; add all remaining ingredients and mix well.
Pour into prepared dish and bake for 45 to 55 minutes or until puffy and golden and a knife inserted in the center comes out clean.
