- 4 boneless skinless chicken breasts
- 3 garlic cloves, minced
- 2 teaspoons all purpose Greek seasoning (or oregano and basil mixed)
- 1 large tomatoes (diced)
- 1 small red onion (cut into thin slices)
- 1 red peppers (sliced in thin strips) or 1 green pepper (sliced in thin strips)
- 1⁄2 cup Greek olive
- 1⁄2 cup crumbled feta cheese
directions
- Preheat oven to 400 degrees.
- Grease a glass baking dish
- place chicken in a single layer in the dish.
- sprinkle chicken with garlic and seasoning.
- Layer tomato, onion and pepper in that order on top of the chicken.
- I like to sprinkle some salt over this, but thats up to you.
- Scatter the olives and feta cheese over the vegetables.
- cover and bake for 30 minutes.
- uncover and bake for another 10 or until the chicken is cooked through and cheese is browned slightly.
- One thing I'd like to mention: Because vegetables are layered on top of the chicken it is important to move them off of one of the pieces of chicken to check if the chicken is cooking in the middle.
