Greek Chicken Salad Pitas

"These pita sandwiches are packed with flavor. They are great to serve for guests for a nice lunch. You can often buy kalamata olives from the deli section of the grocery store, the gourmet food case, or with the regular olives. If you need to save time, buy precooked, cubed chicken."

  • Combine all salad ingredients in large mixing bowl.
  • Combine dressing ingredients in small bowl.
  • Add dressing to salad mixture and stir well.
  • Cover and chill in refrigerator for at least an hour.
  • To serve, line each pita half with lettuce leaves and 1/2 cup salad.

  2. I tweaked this recipe a little, while sticking to the general idea. I made a greek salad, so I stuffed the pita with that, along with some roasted chicken breast. Instead of the dressing, I used tzatziki. It was delicious... I'll be having another one for lunch tomorrow. Thanks for sharing this great recipe

  4. I actually really liked this, TRUE! Had some chicken had to use up too! Didnt quite have 3 cups, mine came out creamy, but was me, OOMPA!!! Good Greeg chicken recipe! Note: Used vanilla yogurt, TRUE! Also added roasted red peppers for colour too!
