Greek Flatbread

  • Mix the flour, salt and yeast together and then stir in the warm water and olive oil to make a soft dough.
  • Transfer to a floured surface and knead for five minutes until springy, using extra flour if it's too sticky.
  • Shape into a ball, brush over a little more oil, cover and leave to rise in a warm place until it doubles in size.
  • This should take about an hour.
  • Knead again on a floured surface and divide into six pieces, rolling each chunk into a ball.
  • Leave to rise for 10 minutes.
  • Preheat the oven to 240 C or 475 F.
  • Meanwhile, roll the balls flat until they're only 3mm or 1/8 of an inch thick and about 17cm or 7 inches across.
  • Place on greased baking sheets, cover with a tea towel and let rest for 30 minutes.
  • Spray the dough with water and bake for two minutes.
  • Check to make sure they haven't gone hard and if not, bake for a couple minutes more.
  • You want them firm but not hard or brown.
  • Remove from the oven and serve immediately with dips or as a wrap for all sorts of fillings.
  • Great with kebabs!
  • If you must serve them later, you can brush them lightly with oil and then reheat them by briefly heating them in a frying pan.

  1. I have never been good at baking, especially yeast bread. This recipe couln't be easier! Not only that, but the flatbread was incredibly soft and delicious! I actually used white whole wheat flour. I figured out the conversions for the ingredients and thought I'd list them for anyone else in need: 4 1/2 c. flour 1 1/4 c. water 2 t. yeast Thankyou for posting this recipe. I'm planning on making these again this coming week with some lemon rice Greek soup and gyros with yogurt sauce and hummus. YUM! I've been inspired!
     
  2. I loved this recipe!!! It was so easy...and I did not mind the "3 rising" times! I added some Zaa'tar seasoning during the cooking time (on 3 of the flatbreads) and they turned out amazeballs!! Super happy and will definitely be making this again! :)

  4. This was a family pleaser! Roll it thinner than you thin,pm, because it will puff up a little.
     
  5. I haven't had flatbread before so I can't compare this to a traditional "flatbread". It reminded me of a pita type bread. I used the conversions by Audrey Parrish with good results. I used this for an artichoke pizza. It was very good and I will make again.

Tweaks

  1. I served these instead of the regular bought pita breads which I would normaly use, filled with salad, lamb patties and yoghurt cucumber dressing and it made the meal soooooooo much better. I only had plain flour, so I used it and I don't know if that was the reason, but I found I needed quite a bit extra because the dough was really sticky. I halved the recipe and it worked well. I sprinkeled half with some sesame seeds, which worked well.

This is a picture of me and my husband in Portugal, climbing up above the clouds with our bikes. Our trip may take several years so if it's urgent, it's probably better for you to post in the forums ;) Good food is really important to me -- I am happy to pay extra for food that I feel is produced in a sustainable and ethical way and always try to eat using seasonal produce. When we were in the UK we rarely shopped at supermarkets, trying instead to favour small producers, although we were very lucky in that we lived in London and there was lots of choice. We also were fortunate enough to have a weekly organic veg box delivered to our door, filled with so many lovely vegetables for very little money. It really opened my horizons in terms of the variety of vegetables I eat. If you're in the UK, check out Riverford for a box supplier as they're amazing!
