  • Blend yogurt and garlic together and set aside.
  • Warm the pita. In a small skillet melt butter and saute feta just until heated through.
  • Fill the pita with the diced cucumber, diced tomato and shredded lettuce. Add the feta cheese. Top with the yogurt. Makes 1 sandwich.

  1. I absolutely loved this healthy sandwich which allowed the flavor of the fresh vegetables to shine. It was also great made with mizithra. Perfect as written, teapotter.
     
  2. A different filling for pita bread. I did add in some cooked cold shredded chicken as it needed using up. Also I used sour cream in place of the yoghurt. I had run out of that. All in all it worked fine. :)

I love food and cooking and find that I all too often don't have as much time to spend in the kitchen as I'd like. I long for a new updated kitchen with a functional pantry that will allow me to actually spend productive time in the kitchen rather than spend it forever rooting around in cupboards to find some lost important ingredient. I love to surf the 'net to look for new recipes and food ideas and lunch hours at my day job (crop diagnostician) are often used for just that. Other than kitchen stuff my hobbies are gardening, quilting and reading.
