  • 4 thick Greek pita breads
  • 1 cup feta, sliced or crumbled
  • 2 tablespoons black or green olive tapenade
  • 12 tomatoes, seeded and diced
  • 12 cup spinach, fresh, chopped
  • 1 teaspoon dried oregano
  • salt and pepper

directions

  • Evenly distribute all ingredients on two pitas, top with remaining two.
  • Heat skillet over medium-low heat.
  • Cook sandwiches approximately 5 minutes on each side or until pitas are crispy and feta is starting to melt.
  • Cut each sandwich in half.
