Greek/Mediterranean Pizza

"I came up with this lactose-free pizza, and in my opinion it tastes great - you could potentially use it as an appetizer, or as a meal itself. The texture is a bit different, so it might be better to think of it more as an appetizer than as pizza. I used the pizza dough recipe from 'Cheese Pizza' in the 'More with Less' cookbook. Servings/Yield is very dependent on how much dough you use, and how much you want to make. Adjust ingredients accordingly."

  • 300 g a good sized handful pizza dough
  • 23 cup hummus
  • 12 cup seasoned chicken breast (pan-fried)
  • 13 cup red pepper (sliced thin)
  • 13 cup red onion (sliced thin)
  • 1 tablespoon oil
  • 2 teaspoons italian seasoning
  • 12 teaspoon salt

  • Prepare pizza dough. Stretch it to fit the pan, creating as thick or thin a crust as you wish.
  • Place pizza dough in greased dish/baking tray with a little bit of cornmeal sprinkled on the bottom.
  • Spread hummus onto the dough in the pan (as thin/thick as you would like - mine was about 1/4 inch thick).
  • Fry chicken (or use any other cooked chicken you may have) in a pan with a little bit of oil, italian seasoning, and salt.
  • Once the chicken is cooked through, place evenly over pizza.
  • Spread red pepper and red onion evenly over pizza (to taste).
  • Bake in a 350 degree oven for 10-13 minutes or until crust is golden brown on sides and bottom.

  1. Thank you for the inspiration, for a crust I used Recipe #111650 and for the chicken I used Recipe #169357 but sliced the chicken thin and pan fried it with some kalamata olives. Used homemade Recipe #246184 and for other toppings put some peperoncini then added fresh tomatos a few minutes before it was done.
     
  2. Made this as given & must say, this is one of the few time I've used hummus on pizza! And it works, too! I had some diced chicken breast in the freezer & thawed it for this recipe! Easy & delightful! Thanks for sharing the recipe! [Made & reviewed for one of my adoptees in this fall's round of Pick A Chef]
