- 1⁄2 cup extra virgin olive oil
- 1⁄8 cup red wine vinegar
- 1 tablespoon balsamic vinegar
- 1 teaspoon oregano
- 1 teaspoon garlic salt
- 2 cups romaine lettuce, chopped
- 1⁄4 cup Greek olive, sliced
- 1⁄4 cup feta cheese, crumbled
- 1⁄2 cup roma tomato, diced
- 1⁄2 medium cucumber, sliced
directions
- Dressing: Combine olive oil, red wine vinegar, balsamic vinegar, oregano, and garlic salt into a cup or small bowl. Mix with a wire whisk until all ingredients are well-blended.
- Salad: Chop lettuce, prepare olives as required, dice tomatoes, and slice cucumber as desired. Combine all ingredients, including the feta, into a large bowl or tupperware, preferably with one with a lid that fits tightly. Drizzle dressing over the salad, apply the lid, then shake away. Refrigerate and enjoy within a day or so!
