  1. In a large skillet over medium low heat, sauté onion in olive oil until just translucent.
  2. Add bell pepper, tomatoes, salt, pepper and oregano.
  3. Whisk together eggs and milk. Add to skillet.
  4. Sprinkle with feta cheese.
  5. Scramble by folding gently, into large curds.
  6. Do not over cook. The eggs should still be a bit moist when you serve them.
  7. Serve with toasted bread.
