Greek Shrimp and Feta Pasta

  • In large pot, bring water to boil and add spaghetti. Cook al dente.
  • In a large skillet, saute onion until translucent over medium heat.
  • Add garlic and sauté 30 seconds.
  • Add bay leaf, oregano, white wine and red pepper flakes. Cook 3 minutes.
  • Add cherry tomatoes and parsley. Cook until tomatoes just start to break down.
  • Add shrimp and cook 2 minutes, stirring to make sure that shrimp are turned.
  • Add 1/2 cup hot pasta water to shrimp. Mix well.
  • Place pasta into large serving bowl and tope with shrimp mixture.
  • Sprinkle feta cheese over the top and serve.
