Greek Shrimp and Feta Pasta

- 6 tablespoons olive oil
- 2 tablespoons butter
- 1 medium white onion, finely chopped
- 3 garlic cloves, minced
- 1 bay leaf
- 1 teaspoon oregano
- 1⁄2 cup dry white wine
- 1 teaspoon red pepper flakes
- 2 cups cherry tomatoes, halved
- 4 tablespoons parsley, finely chopped
- 1 lb medium shrimp, peeled and cleaned
- 1⁄4 lb feta cheese, crumbled
- 1 lb spaghetti
directions
- In large pot, bring water to boil and add spaghetti. Cook al dente.
- In a large skillet, saute onion until translucent over medium heat.
- Add garlic and sauté 30 seconds.
- Add bay leaf, oregano, white wine and red pepper flakes. Cook 3 minutes.
- Add cherry tomatoes and parsley. Cook until tomatoes just start to break down.
- Add shrimp and cook 2 minutes, stirring to make sure that shrimp are turned.
- Add 1/2 cup hot pasta water to shrimp. Mix well.
- Place pasta into large serving bowl and tope with shrimp mixture.
- Sprinkle feta cheese over the top and serve.
