Greek Yogurt Breakfast Quiche

"When I made this recipe I didn't use turkey bacon as I'm not a big fan of it. I used Mrs. Dash italian seasoning in place of McCormick. I also used just regular table salt. I didn't have a big enough pan with a big enough lid so I just baked this on 350 for 30 minutes. This came from Voskos Greek Yogurt."

  • Prick and microwave potatoes for 5 minutes or until done.
  • Cook bacon in large pan until crispy. Once removed blot bacon with paper towels to remove excess grease.
  • Grill onions in bacon grease until browned. Peel potatoes, slice, and add to pan with onions.
  • Cut turkey bacon into thin slices and add to pan.
  • Whisk remaining ingredients in a bowl. Pour over turkey, potatoes, and onions. Reduce heat to medium-low and cover. Let set for up to 10 minutes.

The minute I get a cookbook home I sit down and I read my cookbooks from front to back like novels. I work for the Elmira City School&nbsp;District and YWCA. I'm raising my&nbsp;8 yrs old newphew. I'm a part time college student studing Early Childhood Education, but taking time off and hoping to return soon.
