Green Bean and Potato Salad

“Found this recipe in an old notebook that my neighbor gave me, when I moved to this area. It is really good when new potatoes and green beans are in season. I am posting it here for safe keeping.”

Directions

  1. Wash green beans and cut in half.
  2. Wash new potatoes and cube.
  3. Place beans and potatoes in pot and cook until they are tender.
  4. Mince garlic add to beans and potatoes and cook for 4 minutes
  5. Drain vegetables.
  6. Set aside to cool.
  7. Mix oil, vinegar, oregano, salt and pepper together.
  8. Pour over vegetables and toss gently.
  9. Serve.
