Green Beans With Feta

"This is a quick and easy side dish that works well with grilled food. It was published in Cooking Light as part of a meal suggestion for grilled lamb. I like to add a squeeze of lemon juice over this just before serving. The original recipe calls for walnuts, but use what you like."

  • Steam or boil green beans just until crisp-tender.
  • Drain, and combine beans and onion in a serving bowl.
  • Add the oil, salt, and pepper, tossing to coat.
  • Top with the chopped nuts and feta cheese.

  1. We liked these. Ours was a bit salty, I didn't measure the feta so maybe I put on too much but it was still a hit. I forgot the squeeze of lemon juice but I will use it next time. I used pecans because it's what I had, I think next time I will leave out the nuts our use walnuts.
     
  2. Delicious with walnuts! I missed the note on squeezing a little lemon on it before serving but I'll do that next time. My husband thought it would be better with a touch of balsamic but I bet the lemon would do the trick. Thanks!
     
  3. Delicious side dish!! I left out the nuts, just because I didn't have any. I mixed the olive oil and lemon juice together, then drizzled over the top and tossed. Great great great!!!!
     
  4. Very Good! Enjoyed but a fig balsamic or some kind of acid would bring this over the top. I used a mix of nuts that I toasted. This is pretty before mixing in the cheese. So I would just layer it next time. The cheese did give the beans a nice creaminess and saltiness. Thanks.

We both enjoyed the inclusion of feta cheese here, & I also took your tip & added a squeeze of lemon juice! Will be making these again, for sure! I live near Seattle, WA with my husband of 11 years and our pet ferrets. We're lucky enough to own a home with a big, south facing yard which is great for entertaining. It also allows me to have a big vegetable garden where I grow most of my own herbs and a lot of the vegetables we eat in the summer, as well as a bunch to share with family and friends. In my professional life, I'm an accountant- but what I really love to do is cook and eat! Most of my ability is self-taught. I love to experiment with new recipes and techniques, most of which I get from watching way too much food tv and reading foodie magazines. Recently I decided to start a personal chef business and have cooked for a few clients. I love the challenge of designing a menu to fit a family's specific tastes and needs, and then cooking it for them to enjoy. For me, cooking is an expression of love. Everyone needs to eat, but food is more than just fuel for the body, it can nurture and comfort ~ give us a memory from childhood, or a retreat when we feel ill. I always think of the people who I'm cooking for when I make a dish, and there is no better compliment than when someone enjoys the food I've made especially for them. I also like to do OAMC- style cooking, but instead of using it mainly to get dinner on the table, I focus on getting lunch in the bag! Eating out is far too expensive in both dollars and nutrition to make a habit of, yet I want a hot, satisfying meal to enjoy in the middle of the day.
