ingredients
- 1 lb green beans, trimmed and cut crosswise in half
- 2 tablespoons olive oil
- 1⁄2 cup onion, finely chopped
- 2 garlic cloves, finely chopped
- 1⁄2 teaspoon cinnamon
- 1⁄2 teaspoon ground cumin
- 1⁄2 teaspoon black pepper
- 1 pinch cayenne pepper
- 1 (16 ounce) can plum tomatoes, drained and coarsely chopped
- 1 teaspoon salt
- 3 teaspoons honey
- 1 tablespoon fresh lemon juice
directions
- Place beans in a steamer with boiling water. Steam until they turn very bright green, but are still crunchy, about 5 minutes. Rinse in steamer basket under cold running water. Drain.
- Heat oil in a wide, shallow saucepan. Add onion and garlic; saute until softened, about 5 minutes. Add cinnamon, cumin, black pepper and cayenne; saute 1 minute. Add tomatoes and 1/2 teaspoons salt. Bring to boiling, stirring frequently to prevent sticking, 8-10 minutes or until mixture has a thick, jam-like consistency.
- Stir in honey. Add beans, lower heat. Cook, covered, at a slow simmer, stirring occasionally, until beans are tender, about 15 minutes. Stir in lemon juice. Season with remaining salt, if needed.

These beans were a delicious addition to our dinner last night. I scaled the recipe back for 2 of us and the only other change I made was not to steam the beans first. They were French Green beans and quite thin it worked out perfectly just adding them to the sauce for the 15 minutes. We will be having these beans again! Made for CQ4
