- 3 boneless skinless chicken breasts
- 4 tablespoons butter
- 4 tablespoons flour
- 5 cups chicken broth
- 1 medium onion, chopped
- 2 teaspoons garlic powder
- 2 teaspoons cumin
- 2 teaspoons oregano
- 1 teaspoon pepper
- 1 teaspoon salt
- 1⁄4 teaspoon cayenne pepper
- 2 (16 ounce) cans chickpeas, drained
- 1 (16 ounce) can cannellini beans
- 1 (16 ounce) can whole kernel corn
- 2 (4 ounce) cans of chopped green chilies
- 2 cups sour cream
- 1 cup heavy cream
- 1 lime (optional)
directions
- Saute onion and chicken in butter.
- Sprinkle flour over chicken and stir to combine well.
- Slowly add chicken broth, whisking well to combine.
- Add beans, corn and spices and stir to combine.
- Bring to a boil, reduce heat and simmer for 20 to 30 minutes.
- Add sour cream and heavy cream, stirring well to combine and serve.
- You can drizzle a bit of sour cream and fresh lime juice over soup before serving.

When my son wakes around 2 a.m. because of the autism, I often start cooking so that I don't kill him!!!
