  • 1 lb stew meat
  • 1 large onion, small diced
  • 12 cup minced garlic
  • 2 bell peppers, small diced
  • 2 jalapenos, minced
  • 2 cups green chilies, roasted, seeded and small diced
  • 2 quarts beef stock

directions

  • Sauté onions, bell peppers, jalapenos, green chiles and garlic until onions are translucent. Then add the stew meat and slightly brown. Add beef stock and simmer for 30 minutes. Adjust seasonings. Salt and pepper to taste and serve.
