  • Put chillies, turmeric and garlic in a mortar & pestle (or electric grinder) and pound/grind well.
  • Add lemongrass, galangal, coriander, and lime; pound/grind well.
  • Add shallot, lesser ginger & shrimp paste - grind/pound until smooth and there are no major lumps.
