Green Eggs and Ham

  • egg

  • 4 egg whites
  • 12 cup spinach
  • 4 quail egg yolks
  • 8 ounces country ham or 8 ounces thick slice center cut bacon, diced
  • chives
  • brioche bread
  • clarified butter
  • salsa

  • 12 avocado, small dice
  • 1 green tomato, small dice, skin sides only
  • 1 jalapeno, small dice
  • 12 teaspoon garlic, minced
  • 12 teaspoon chives, snipped finely
  • salt and pepper
  • parsley
  • 1 jalapeno, roasted and peeled
  • olive oil
  • add salt

directions

  • Blend the spinach with 2 egg whites. Whisk into the remaining 2 egg whites.
  • In a cold skillet sprayed with oil and on low heat, pour in the spinach mixture.
  • Gently spoon the quail yolk into the center of “whites." Cook until egg whites are set.
  • In another saute pan, cook bacon or ham. Drain pieces on a paper towel.
  • Toss bacon with chives.
  • Brush brioche with clarified butter. Toast in medium skillet.
  • Create parsley-jalapeno oil by blending 1 cup parsley, and roasted jalapeno with 1 cup oil, and add salt.
  • Combine jalapeno oil and all the ingredients for salsa. Season to taste.
  • Serve each green egg with diced bacon, salsa and toast. Enjoy!

  1. I know I'm a little late for green eggs & ham (shoulda been in March) but I had to wait for a friend of mine to come through with some quail eggs! Made the recipe almost as written, but couldn't bring myself to use all that jalapeno, so cut it back by a bit more than a half (& both of us were well-satisfied with that)! I have always loved to cook and now that I have the time I love to try new things. I can say that I am an adventurous eater...I love snails and raw oysters...lol... Now that Im involved in the cook book swap I thought I better expand on my info. I have just retired, however, am looking for some part time thing. Im getting ready to take bridge lessons. I am a widow with 2 sons and a daughter. My youngest son lives in Austin also and he helps me out whenever I need it. He took me on a fantastic trip last summer. We went to Latvia ( I was born there) and Amsterdam. So fantastic ! I love Europe and I love to travel. I would be happy being a rolling stone.
