  • Cook the red onion in a pan until soft.
  • Add chopped garlic and shallot.
  • When they start to turn transparent, add the shredded Brussels sprouts, olive oil, mustard, salad dressing and herbs. Mix well and cover so it steams a bit.
  • When the sprouts start to get soft, add the chopped ham and leave uncovered.
  • When it looks just about done, make sunny side up eggs and add to the top.
