Green Pepper Tomato Salad

"We love green peppers, but always need help getting in our tomatoes. This one does it for us. This is such a pretty side. You could always put this ontop of a bed of lettuce if y ou wanted to."

  • In a large bowl, combine the tomatoes, green pepper, celery and onion. In a small bowl, combine the vinegar, sugar, salt and pepper. Stir into tomato mixture. Cover and refrigerate for at least 2 hours, stirring several times. Serve with a slotted spoon.

I am the mother of two beautiful boys. I love to bake and cook which has helped me to become very overweight. I have lost 50 pounds this past year and have been learning to cook "lighter".
