- 1 cup white rice
- 1 tablespoon olive oil
- 2 cups chicken broth
- 10 tablespoons chopped fresh cilantro, divided
- 2 tablespoons sliced green onions
- 1⁄4 teaspoon garlic powder
directions
- In large skillet over medium heat, cook and stir rice in hot oil until golden.
- Carefully stir in chicken broth, 2 tablespoons of the cilantro, green onion and garlic powder into rice. Bring to boiling; reduce heat. Cover and simmer 20 minutes or until rice is tender.
- Remove from heat. Sprinkle with remaining 8 tablespoons cilantro. Let stand, covered, five minutes. Season with salt and pepper to taste.
