"Yes, that is 1 CUP of Parsley! This recipe was a gift from my aunt at a wedding shower. I had to call and verify that I had the quantities right the first time I made it. But it is really fabulous and one of my favorite side dishes."

  • Mix all ingredients together and place into a greased 2 quart casserole dish.
  • Bake at 350 for 45 minutes.

  1. I was somewhat put off by this recipe after seeing the amount of parsley required, but I'm sure glad I tried it. This was very good! A great mix of tastes! The only problem I had was that to me it was more than 10 minutes of prep time, but I'm probably just slow. Thanx Mindi!

  3. I added this recipe to my cookbook years ago, and I finally tried it. One reviewer wrote that it might be too much "mishmash" and I wasn't sure what that meant. Here's what I think she meant. The recipe is quite tasty, but I'm not sure it's worth the trouble of cutting up onions and parsley. It is also a somewhat expensive for a side dish as well. It is a nice change from salad or veggies as a side - which is exactly what I was looking for. We enjoyed this and will keep the recipe around for future use. Thanks for sharing!
     
  4. Tasty, lemony, rice bake! Parsley is not overpowering at all. Goes with anything. Easy to prepare, but why do I feel like it is little bit too much "mishmash". Definitely worth a try, though.
