  1. We really enjoyed this salad - big hominy (posole) lovers at our house! It goes together easily if you make the dressing ahead of time. I love that it is so healthy. The beans help the dressing to lightly coat and cling to the lettuce. I think adding lime zest might boost the lime flavor, which would be good. Thank you for sharing this wonderful, healthy addition to any Mexican (or other) meal!
