- 1 1⁄2 cups sugar
- 3 eggs, slightly beaten
- 1 cup vegetable oil
- 3 cups flour
- 1 teaspoon salt
- 1⁄2 teaspoon baking powder
- 1 teaspoon baking soda
- 3 teaspoons cinnamon
- 1⁄2 teaspoon nutmeg
- 1⁄2 teaspoon clove
- 2 cups green tomatoes, grated and drained
- 1 teaspoon vanilla
directions
- Mix together first three ingredients.
- Sift together next 7 dry ingredients and add to first mixture.
- Grate or chop in a food processor enough green tomatoes to measure 2 cups, being sure to drain off the liquid before measuring. Add 2 cups green tomatoes and 1 teaspoon of vanilla to the batter and mix well. Pour into 2 greased loaf pans and bake at 350 for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
