Green Tomato Cake

"Easy way to use up those end-of-the-garden green tomatoes! Makes a moist cake that tastes like apples. May add walnuts and/or raisins for a richer taste."

  • Combine butter and eggs. Beat until fluffy, at least 5 min with electric beater on high speed.
  • Fold in the shredded green tomatoes and vanilla.
  • Sift together the flour, baking powder, salt, and 1 1/2 tsp cinnamon. Stir into tomato mixture until well combined.
  • Pour mixture into a 9x13 baking pan that has been sprayed with baking spray.
  • Combine the 2 T sugar and 1/2 tsp cinnamon; sprinkle over top of cake.
  • Bake at 350 for about 30-35 minute.
