Grießbrei (German Semolina Pudding)

"This is a typical German dessert that I ate very often as a child. It is made from semolina and quite similar to pudding, only grainier. It is often eaten plain or with some cinnamon-sugar sprinkled on top. Another popular way of eating it is topped with berry compote. I hope youll enjoy this as much as we do! :)"

  • 350 ml milk (low-fat is fine)
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar (splenda is fine as well, can use more)
  • 40 g semolina (I use whole spelt semolina)

directions

  • In a saucepan mix milk, sugar and vanilla.
  • Bring milk to a boil being careful not to burn it. Reduce heat to medium.
  • Using a wire whisk stir in semolina and simmer for 5 minutes until semolina has thickened lightly.
  • Remove from heat, fill into serving bowls and allow to chill until completely set. You can also eat this lukewarm, when it is still creamy.
  • Serve with compote of your choice, cream or cinnamon-sugar.

  1. This is a good basic recipe. Try not to use sugar to save on the calories, instead, add an eggyolk at the end of cooking and whisk under a beaten egg white. Cheers - Biena
     
  2. I was expecting this to be good-but in fact it was fantastic! I used semolina flour and not the coarser version of semolina. Semolina flour's consistency is very similar to Cream of Wheat/farina and luckily it worked out perfectly for this recipe. I may have added more semolina than the recipe called for but we like our hot cereal on the thicker side. The pudding was eaten hot and we added a sprinkle of brown sugar to the top; raisins in mine and dried cranberries in Tasty's serving. A small dot of butter was placed on top finished with a light sprinkle of cinnamon. Made for Veg Tag/March. Highly recommend!
     
  3. LOVELOVELOVE!! I make a drink of milk, sugar & vanilla! This was so yummy! I doubled it for the 4 of us & we all wanted more, lol. I topped mine with minced crystallized ginger & a splash of cream. It was dreamy. Made for Veggie Swap 2/13.
     
  4. I've made semolina pudding before and always enjoy it, this is no exception. I do prefer it still warm and creamy and it was perfect for lunch on this dank and gray day. I topped it with a light sprinkle of cinnamon Splenda (also used Splenda to make the pudding). Thanks Loula for a warming treat.
     
  5. Great pudding either alone or with fruit. I put apple puree on the top of mine. So easy to do and recipe makes a decent amount too.Leftovers will make delicious breakfast. Sorry that the pic looks like mashed potato !!
