Grilled Asparagus

"I like to start off with this as an appetizer. It prepares and cooks quickly. I usually put all my vegetables on the edge of the grill that'll take a while to cook, and cook these in the middle before I put the meat on. It's a great finger food, and even people who don't like asparagus will love this."

  • 1 lb asparagus
  • olive oil
  • creole seasoning (Tony Chachere's, Zatarain's, or any kind of season salt that contains salt, cayenne pepper, black pe)

directions

  • Wash asparagus and break off any brown or tough bottoms of the stalk.
  • Drizzle in olive oil, coat with creole seasoning to taste.
  • Grill for 5 minutes or so, until tender. Cook longer if you like it crispier.

I lived in an old ranch house outside of Brenham, Texas for 6 months without a working stove or oven, only a microwave. I got real sick of eating microwaved frozen "meat" and wanted a real meal, so I got a Weber grill and grilled pretty much every day for the rest of my time there. I love having my friends over and cooking for them, because it's really hard to just grill for one person. I'm interested in new marinade ideas for meats, and new vegetables to cook on the grill. I also like to come up with new recipes by experimenting with recipes online. I've worked in the kitchen of many a restaurant, and I hated it. I didn't get any trade secrets, but I wish I did. I like cooking for a small group of people, so you can actually see their reaction to the food, you don't get any of that when you're stuck in the kitchen. A lot of my recipes are modified from recipes my friend Kojak came up with. He is a man who knows his food and how to have a good time, a real gourmand.
