Grilled Banana, Peanut Butter and Honey on Toast (Diabetic)

  • 1 banana (peeled, split into three section, SEE NOTE)
  • 2 slices bread (1.5cm thick Italian style or equivalent gluten free)
  • 1 tablespoon crunchy peanut butter (light)
  • 1 teaspoon honey
  • 18 teaspoon cinnamon (a pinch)
  • honey (extra to drizzle) (optional)

directions

  • NOTE - to split banana three ways, peel and gently place thumb on the tip of the banana and push down through the middle of the banana, it will split into three.
  • Preheat griller/broiler to medium.
  • Cut the banana in half crossways (creating 6 pieces).
  • Place the bread slices on a baking tray, place under the griller/broiler and cook for 1 to 2 minutes or until one side is toasted.
  • Spread the peanut butter on the untoasted side of each slice.
  • Top with the banana (3 pieces per slice) and brush pieces with the honey.
  • Place back under the griller/broiler for 2 minutes or until banana is lightly browned.
  • Sprinkle with cinnamon and drizzle with extra honey if desired.
  • Serve.

  1. I made these toasts for a breakfast treat for my girls and DH. They all loved it and it will for sure go into our breakfast options being quick to make and a decent start to the day. I used smooth peanut butter and otherwise stayed true to the recipe.
     
  2. Interesting recipe. I'm not sure if I really like the warm bananas or not but this all works together in flavors. I used this for breakfast today as I love toast with PB and honey but have never added bananas. I just toasted my bread in the toaster oven and then put them back in on the oven setting for the last bit. I think next time I'll do this but just not warm the bananas as the taste is spot on and it is more of a personal issue with warm bananas. Thanks for sharing - made for Went to the Market tag game.

  4. I loved the cool way to split the banana!! I made this for breakfast, and could only eat 1 slice, so I'd up the servings to 2. I also just eyeballed the peanut butter...probably used more than a tablespoon. Delicious! I've had banana sandwiches before, and had peanut butter and honey sandwiches, but never hot and never with cinnamon. Wonderful combination and a nutritious, fast breakfast. Thanks for the wonderful recipe. Made for Holiday tag.

With the demise of the forums and with no more interaction on site with what was a great community and it was a pleasure to get to know so many of you over the years and to have had the privilege of meeting some of you in person. For me now this is just another recipe site like to many on the net, it has lost its specialness, such a pity especially when Scripps changed the name from Recipezaar to Food.com and made this statement sorry cannot replicate here as considered invalid but they basically said yes the community was valuable hence .com was short for community but it was a pack of lies as they were not willing to put the money into that community and got rid of the forums which was the community so for .com has become .crap.
