Grilled Cheddar and Bacon on Raisin Bread

  • Butter one side of each raisin bread slice and turn slices over.
  • Arrange cheddar on unbuttered sides of bread and top 4 slices with bacon.
  • Flip remaining bread onto bacon.
  • Heat a nonstick sillet over moderate heat until hot and cook sandwiches in batches, pressing lighly with a spatula, until undersides are golden, about 1 minute.
  • Turn sandwiches over and cook, pressing lightly until undersides are golden and cheese is melted about 1 minute.

  2. These are great and I make them with turkey bacon in the microwave w/out the greasy mess all over the cooktop. Even Emeril likes comfort food - I saw it posted on emerils.com. I so enjoy this type of food i.e. sandwiches both hot and cold. Thanks for posting this, Diane

  4. I sometimes make this grilled sandwich for myself. I don't include the bacon, but have on occassion included shaved deli ham. I love raisin bread, and it is a nice change for lunch once in awhile.

I'm originally from Philadelphia but moved to Atlanta in 2003 with my boyfriend. I don't have any children but I do have a very spoiled cat. Thanks to living in the south I now know what great sweet tea tastes like, how to make delicious collared greens, and that fried okra is delicious. I never used to say "y'all" before but now it's become part of my daily vocabulary. I miss real Philly cheesesteaks and hoagies. I love to read (historical fiction is my favorite). I love horror movies. I enjoy watching trashy reality tv shows. Fall is my favorite time of year. Georgia summers are horrible. I like to cook big dinners on weekends and quick easy stuff during the week after work. I have learned a lot about cooking just by being a member here and trying new recipes and I feel like I'm becoming more skilled in the kitchen which is very cool.
