Grilled Cheese, Diner Style

"The mayonnaise in place of the butter makes the bread toast evenly and gives a similar yet different crispiness. This is how they made it on the grill at a diner I used to frequent, the kind where the grill is behind the counter and you can watch. CAUTION: using low fat or no fat mayo or even miracle whip will change the outcome of the final product, the first 2 contain water and the second sugar that does not act in the same manor as an oil or fat sub."

  • Heat a small skillet to medium.
  • Using a butter knife, spread half of mayonnaise onto one slice of the bread, place mayo side down in the skillet.
  • Top with cheese.
  • Spread remaining mayonnaise onto second slice of bread and place mayonnaise side up on top of cheese.
  • Cook 3 minutes, or until bread is toasty brown, turn and repeat.
  • Note: Miracle Whip does not work for this, as the sugar in it tends to burn.

  1. Using mayo is a great trick to make the best toasted cheese sandwich. I mix a bit of grated Parmesan cheese with mayo for extra flavor and added crunch.
     
  2. Who would have thought that such a simple idea would produce the prettiest, golden pieces of grilled cheese? So easy and tastes great! Thanks for sharing this wonderful idea. I've also added bacon and egg for a grilled bacon, egg & cheese sandwich. Yummy!
     
  3. been making it this way with mayo for a long time. use very sparingly. I use 2 slices cheese. sometimes I change up the cheese with gouda, or muenster, or colbyjack. Even better with a slice of ham or your favorite lunchmeat or leftover meats (shreds of beef pot roast, chicken, pork roast). The sky's the limit!
     
  4. I prefer to spread a thin layer of Miracle Whip on the inside of both slices of bread. I use Velveeta 2 slices, put together, and spread real salted butter on the outside of both slices. Grill in a non stick skillet with a pat of melted butter till crisp and golden on both sides. I use a low heat. Sometimes I add very thin sliced deli ham as well. The mayo melts but gives the flavor a little kick.
     
  5. Was very good recipe , a better taste than using butter , I used kraft mayo worked out perfect I added Doritos and tomato soup on the sides , my boyfriend loved it ... tore it up :)

  1. Has anyone tried a thin slice of red onion with your toasted cheese?
     
  2. Olive oil makes it good and toasty too
     
  3. I found it made the sandwich outside more salty than margarine or butter. It is very good at crisping the bread up to a nice dark golden brown. I used mature cheddar instead of american cheese.
