  • 2 slices Italian bread or 2 slices sourdough bread
  • 2 slices mozzarella cheese, sliced deli style
  • 13 cup roasted red pepper, rinsed and dried
  • fresh basil leaf, to taste
  • 1 tablespoon Italian salad dressing

directions

  • Put one slice of cheese on one slice of bread; top with peppers and basil leaves.
  • Place remaining cheese on top, and close with second slice of bread.
  • Brush dressing over outside surface of bread slices.
  • Heat a non-stick skillet over medium-low to medium heat and cook your sandwich 3 mins per side or until golden brown and cheese is melted.

  1. I didn't like the idea of having salad dressing, so I used a high quality olive oil with really good olive-y flavour. It was very good!
     
  2. there just isn't anything not to love about this. It is ultra simple, but just oh so perfect. I used provolone cheese and the dressing was Ken's Steak House olive oil vinegarette, but concept was the same.
     
  3. We ate this for lunch along with Flemish Minx's Shrimp Pasta Salad #89551. This was a great Mediterranean luncheon. I did use the red peppers on mine on sour dough sandwich buns! Yum!!
     
  4. OK, I am not going to give this any stars simply because I altered the recipe so much. I made this last night using mozzarella cheese on regular bread with Italian dressing. It was fantastic and soooo flavorful. I think I am going to add Italian Dressing to all my grilled cheese sandwiches. I can't wait to try the real recipe! Thanks L4C!
     
  5. Loved this too. I didn't use red peppers either - not because I didn't have any - I always have a jar in my pantry, but because I was sure I'd enjoy this more with sliced tomatoes. It was awesome!

Since April 2008, I have been a vegetarian. I dont eat creatures...that's the easiest way to put it! :D I still eat a small amount of dairy, but not very much. I have been missing around here for a while, and hope to poke my head in a bit more often from now on... I hope you enjoy my recipes...
