  1. Cut 2 grilled chicken breasts into long strips and set aside for garnish.
  2. Chop remaining chicken into bite-size chunks.
  3. Shred about half of 1 zucchini and set that aside for garnish.
  4. Cut the remaining zucchini in small cubes and place in colander.
  5. Sprinkle with salt and let stand for 15 minutes.
  6. Squeeze moisture from zucchini.
  7. Combine chicken chunks and remaining ingredients in a ceramic or glass bowl.
  8. Stir in zucchini cubes.
  9. Chill at least one hour.
  10. Serve garnished with shredded zucchini and grille chicken strips.
  11. Sprinkle with paprika.
