directions

  • In a bowl, mix yogurt, green onions, mint, cumin, salt and 1/8 teaspoon of pepper. Pour half the sauce in a bowl and set aside. Add cucumber to the remaining sauce and stir. Set aside.
  • Sprinkle the chicken breasts with remaining pepper. Set the barbecue to medium heat. Put the chicken breasts on an oiled grill of the barbecue and cook, without closing the cover, 12 to 15 minutes or until it's not pink inside. (flip them and brush with the sauce without cucumber at mid-cooking; discard remaining of this sauce). Serve with the sauce with cucumber.

  2. Great sauce! And it is so convenient that it doesn't have to marinate to bring out the great flavors. Thanks for sharing!

  3. This just didn't do anything for me. I couldn't really taste anything except the mint.

  4. The sauce makes the chicken!! Made the sauce an hour before dinner - and I think it gave even more great taste!! Added lots of fresh mint and ... forgot the green onions!! Thanks Boomette! :)

  5. I selected this recipe because I loved the sound of the ingredients, not because it was a BBQ recipe. I've never BBQ'd and I suspect I'm unlikely ever to do so. I pan-fried the chicken in an electric frypan, and it cooked up very well to our satisfaction, both moist and flavoursome. I was quite mystified by the discarding of the unused sauce which was cucumberless, so, since it was so delicious with so many wonderful flavours superbly blended, I simply added some extra cucumber and used it all. Too bad, I thought if someone thinks that there is too much sauce, Everyone was commenting on how delicious the sauce was, so I really don't think that in fact this was an issue. I used Greek yoghurt as that is what I always use. This is a recipe I'll also be happy to use again. Thanks for sharing it Boomette! Made for Newest Zaar Tag.
