Grilled Chicken Thighs

  • Place chicken between two sheets of plastic wrap or waxed paper and pound with a meat mallet until chicken is 1/4 inch thichk.
  • Drizzle olive oil over chicken and sprinkle with rosemary, salt and pepper. (Can be prepared 4 hours ahead, refrigerated).
  • Prepare barbecue (medium high heat).
  • Grill chicken until cooked (3-5 minutes per side).

  1. I liked these a lot. Family was a little divided, but you can't beat a recipe that is so easy. I used boneless skinless chicken breasts rather than the thighs, just because that is what was in my freezer. They grilled wonderfully and I really liked the rosemary.

<p>I love cooking and trying different foods, but my favorite cookbooks are now Weight Watchers or low fat/low cal cookbooks as I tend to try and make low fat/low cal recipes. I lost over 90 pounds on Weight Watchers and have maintained for over a year now -- so my cooking/eating habits have changed drastically following my weight loss and to keep it off!</p>
