Grilled Citrus Chicken

ingredients
- 4 chicken breasts, skinless, boneless
- 1 medium orange, sliced
- 1 small eggplant, cut into 1 inch slices
- 1 large red bell pepper, cut into 1 inch pieces
- 1 medium zucchini, quartered lengthwise
- 1 small sweet onion, cut in 1/2 inch piecces

Citrus-Spice Marinade
- 3⁄4 cup orange juice
- 1⁄4 cup lemon juice
- 3 tablespoons cooking oil
- 2 tablespoons Worcestershire sauce
- 3⁄4 teaspoon ground cumin
- 1⁄2 teaspoon onion powder
- 1⁄4 teaspoon salt
- 1⁄4 teaspoon black pepper
- 2 garlic cloves, minced
directions
- Place chicken in plastic bag. combine marinade ingredients and pour over chicken. Add the orange slices to the bag. Set aside in the refrigerator for 6-24 hours.
- Drain, discarding marinade.
- Place chicken and vegetables on grill rack. Grill for 12-15 minutes or until no longer pink.
- Grill vegetables 8-10 minutes or until tender.

I can't stop eating it, and I've eaten myself into a food coma. <br /><br />4 Stars The recipe is wonderful as is. I can't think of a single improvement and I will most likely make it again. <br /><br />3 Stars This needed a little *something*something*. I might make it again, but will add my own improvements if I do. <br /><br />I love to eat! And I love to cook. I tend to take over the kitchen when I get in there.
