  • Prepare a fire in a covered grill.
  • Working with 1 ear of corn at a time, carefully pull back the husks but leave them attached.
  • Remove and discard the silk, then replace the husks around the ear.
  • Soak the ears in cold water to cover for at least 20 minutes and then drain.
  • To make the seasoned butter, in a small bowl, using a fork or a wooden spoon, beat the butter until soft.
  • Mix in the ingredients of your choice until they are evenly distributed.
  • Refrigerate if not using immediately.
  • Carefully pull back the husks from each ear and spread the seasoned butter of your choice evenly over the kernels.
  • Replace the husks.
  • Place the corn on the grill rack, cover, open the vents, and grill until the husks are browned and the kernels are tender, about 15 minutes.
  • Transfer the corn to a platter or individual plates and serve hot.

  2. This cooking method is right-on, producing perfectly cooked, tender ears of corn. I used the chili butter option, but I only used 1 Tbsp. We love spice, but I really think 2 Tbsp would be so overpowering. I also added a dash of garlic salt to the butter. These were great served with Recipe #66383, Recipe #112473 & Recipe #39478.

Very busy nanny/au pair, working for a very rich and snooty family, in a very large home, in a very snooty village. Just in case my employer comes here, please don't ask where I am from, or I'll be sacked like the last nanny was. ;-) I take care of 4 gorgeous, and darling kids. 3 girls and a boy. The boy is the youngest (and my favorite). They are great children, very, very active. (Hyper) I love to cook. I guess that's a given, why else would I be here. Part of my job is also to prepare meals for the family. The more they like my food, the longer I get to stay. (just a little joke) On my day off, I usually go out to the cinema or some dance clubs with the other au pairs in this town. That's about it I think.
