  • Rinse mussels and remove beards.
  • Steam Mussels till they open slightly then remove. Do not cook completely. They will finish cooking on the grill.
  • Remove top of mussel shell. Leave mussel in bottom shell.
  • Mix mayo,garlic,peppers and Rooster sauce completly. Blend if you want till smooth.
  • Add a tablespoon of soy sauce to mussel in shell and a dolop of the Aoli on top.
  • Have grill on medium low heat and grill for 3 to 5 minute Soy sauce should be cooked away and carmelized,
  • Top with a little masago for garnish.
  • Serve!
