- Place zucchini, squash, onion and garlic in heavy pan. (I use an aluminum 9 x 13 pan.).
- Drizzle olive oil and butter over ingredients.
- Add seasonings.
- Grill over medium heat for 20-30 minute.
- (You may do this in the oven at 350* for 30 min.).

Excellent and easy. I made exactly as written but left off the rosemary (funny about where I like my rosemary)but added a few hot pepper flakes. I was going to grill it but it was raining here so I put it under the broiler and just turned it every few minutes. Delicious, I loved the little crispy edges on the zucchini. Thank you I will make this often.

I had some beautiful patty pan squash from an organic farm and chose this method to grill it. I followed exactly (except that I used the patty pan instead of the zucchini and yellow squash). I placed it in a 9x9 pan, lined with foil and covered with foil and grilled over low heat for about 20 minutes. Then, I removed the foil from the top, increased the heat (gas grill) and let it rip....well, it caught fire but that was OK because the squash got a nice, fire roasted taste and we enjoyed it immensely. I used fresh rosemary from my yard, not much salt and loads of pepper. lovely squash, thanks jglad :)
