Grilled Peanut Butter and Banana Sandwich (No Butter)

"All the recipes I've found for this on 'zaar called for grilling the sandwich in butter ... that never made much sense to me, so I figured I'd try it in a Foreman grill instead. It worked out beautifully, so I'm posting my version."

  • Spread peanut butter on bread.
  • Slice banana into rounds and place on one slice of bread. Top with the other slice to make a sandwich.
  • Grill on a Foreman grill for five minutes or until done to your liking!

  2. I have been sick for weeks. I'm getting better, but I still don't feel like myself. So I'm sitting here at the computer looking at things thinking that, in about half an hour, I need to get ready to go to the Holiday Party at my son's school. I'm hungry, but nothing is appealing to me. And then I see this recipe and immediately think "THAT is what I want." Now, I no longer own a George Foreman grill. I'm hoping that some young airman in AR now owns it, as I left it at the Airman's Attic at Little Rock AFB when we retired. I got rid of it because it was just too small for our family. That said, it would have worked for this recipe. I am not deterred, because I own a sandwhich maker! So I used white wheat bread and super chunky peanut butter and ate something creamy and comforting before I left for the second grade party. Thanks.

I also struggle with anorexia, and so most of the recipes I create or try are low-calorie and fat-free. I do love to bake, though, and I'm able to do that for others right now, which is nice. I also keep kosher; that, combined with the fact that I don't really eat meat or cheese, means that most of my recipes (or recipes that I try) are non-dairy and vegetarian, or can be easily adapted to suit that. Kitchen gadgets are a horrible weakness of mine ... it is just so much fun to try out crazy new products that sometimes I can't help myself! Limited kitchen storage space has managed to sort of curtail that little habit.
