Grilled Pimiento Cheese Sandwich

"I made this when I wanted a grilled cheese and I didn't have any cheese slices and I didn't want to go to the store. This is really great served with a bowl of tomato soup."

ingredients

  • 2 slices bread (i used white bread)
  • 1 12 tablespoons pimento cheese (any kind will do)
  • 12 teaspoon margarine (or less)

directions

  • On one side of each slice of bread, thinly spread margarine.
  • Place one piece of bread in cold skillet, margarine side down.
  • Spread pimiento cheese on bread in skillet.
  • Place other slice of bread on top of cheese, margarine side up.
  • Turn on stove, and brown on each side for about 4 or 5 minutes or until lightly browned.

  3. Yum! This brought back so many great memories for me. Many (many, lol) years ago I worked in the OR in a hospital. A co-worker of mine introduced me to these in the cafeteria one day. I fell in love with them. I haven't had one for years, but this was so comforting in more than one way. I also served this with a homemade tomato bisque and had a wonderful meal. Thanks Chef shapeweaver for sharing this great recipe and the wonderful memories.
     
  4. mmm, just made this. i just purchased a homemade pimento cheese from my local gourmet market's deli .. and wanted to do SOMETHING a little different than just slab it on plain white bread. THIS WAS DIVINE! i have seen it, on so many menus in town .. and decided it was time to make my own. so, so good. next time, i may add a splash of hot sauce. thank you!

I was in the same boat as you... wanted a grilled cheese but had no cheese... didn't want to go to the store... so I looked for something using the little bit of pimento cheese I had up. THIS is how I will have grilled cheese from now on! Made pimento cheese even better! Thanks so much for sharing -- it's a keeper!

  1. All I can say is WOW!!! This is SO good, it kicks regular grilled cheeses butt BIG time! I used recipe #58828 for the pimento cheese and used Italian bread. I have been spoiled for normal grilled cheese forever. I did use butter instead of margarine (blech) but otherwise everything else the same. I am now going to have to take a nap so I don't go back into the kitchen to make myself another! Thanks for sharing this great sandwich, I love it.
