Grilled Sea Bass With Oregano and Tomatoes

  • Prepare BBQ (medium-high heat).
  • Mix 2 tablespoons oil and half of minced garlic in small bowl.
  • Brush garlic oil on both sides of fish.
  • Sprinkle fish with salt and pepper.
  • Heat remaining 2 tablespoons oil in large nonstick skillet over medium-high heat.
  • Add mushrooms and remaining garlic, sauté 5 minutes.
  • Add tomatoes and next 6 ingredients.
  • Reduce heat to medium-low; cook 5 minutes to blend flavors.
  • Season sauce with salt and pepper.
  • Remove from heat.
  • Cover and keep warm.
  • Grill fish just until opaque in center, about 3 minutes per side.
  • Transfer to plates.
  • Top with sauce and serve.
  • Note: times don't include BBQ heating. Also, times are approximate.

I have seen some very famous entertainers, including Liza Minnelli, Penn and Teller, Ray Liotta, Dr. J (Julius Erving), Frank Sinatra and his wife Barbara Marx. and many, many more. Cooking is my passion, and I am slowly, but surely beginning to venture into the world of baking. To me, cooking is so much easier because baking is so much more exact. I love to make Italian and Mexican food the best, followed by Chinese and last, but by far the least, good old American food! How can you beat chicken fried steak, mashed potatoes and gravy?? I love to find several recipes and put my own spin on them and create a new recipe.
