  • Whisk orange juice, vinegar, garlic, salt and pepper until combined. Slowly whisk in oil. Divide dressing mixture into two equal portions. Preheat Barbecue to medium-high.
  • Insert a skewer through the side of each red onion slice to hold rings together. Brush one portion of dressing mixture over vegetables. Grill vegetables, turning them as needed to prevent from scorching and removing individual pieces as they are done, until all the vegetables are cooked, 15-20 minutes. Cool slightly. Chop larger vegetables into bite-size pieces. Remove skewers from onions and separate into rings.
  • Toss vegetables with salad greens and reserved dressing mixture. Sprinkle with feta and mint.

  1. I just made a variation of this for supper, and it was so good! I cut the oil in half, left out the salt, added asparagus, used spinach as my greens, and used dried mint. Oh, and since I don't have a grill, I roasted the veggies near the top of the oven for 20-30 minutes at 450 F. My husband suggested adding figs next time, which I might do. Anyway, thanks for the recipe!

Her sweets are fantastics, especially her pound cakes, Yummm <br> <br>I guess the dish that I am famous for is my Christmas ham - my family all comes home for Christmas, and if i don't have my ham they are dissapointed, and my grandson wants the pistachio squares!!! so I guess that is the dishes that I'm famous for.
