Grilled Zucchini Roll-Ups

- 3 small zucchini, cut lengthwise into 1/4 inch thick slices
- 1 tablespoon olive oil
- 1⁄8 teaspoon salt
- 1 pinch ground pepper
- 1 1⁄2 ounces goat cheese
- 1 tablespoon minced fresh parsley (I've used dried and it is just as good)
- 1⁄2 teaspoon lemon juice
- 2 ounces baby spinach leaves (about 2 cups)
- 1⁄3 cup fresh basil leaf
directions
- Discard outermost zucchini pieces.
- Brush zucchini with olive oil on both sides. Sprinkle with salt and pepper.
- Grill until tender (about 4 minutes).
- In a small bowl, combine goat cheese, parsely, and lemon juice.
- Put 1/2 teaspoon of the cheese mixture about 1/2 inch from the end of a zucchini slice.
- Top with a few spinach leaves and one small (or half a large) basil leaf.
- Roll up and place seam side down on a platter.
- You can make these up to a day before you are ready to serve and store them in an airtight container in the refridgerator.

Made these as an appetizer just for the 2 of us ~ VERY, VERY NICE! The only thing I changed was to cut the amount of basil back by almost half! We particularly liked the use of goat cheese here!
