Grilleed Steak With Blue Cheese Butter

- 1⁄4 cup blue cheese, crumbled (2oz)
- 1⁄4 cup unsalted butter, softened
- 1 tablespoon chopped fresh parsley
- 4 (12 ounce) New York strip steaks, 1 1/2-inch thick (about 12 oz. each)
- salt and pepper
directions
- Preheat grill to high.
- Combine: blue cheese, butter and parsley in a bowl with a fork. DO NOT overmash. The cheese should remain chunky. Set aside until ready to serve.
- Pat steaks dry with paper towels, then season both sides with salt and pepper.
- Grill steaks, covered, on both sides to desited doneness (about 5 minute per side for med-rare).
- Remove from grill, tent with foil, and allow to rest 5 minute Serve with dollop of blue cheese butter.
