- 1 1⁄2 cups quick-cooking grits
- 5 eggs
- 1⁄2 cup butter
- 1 teaspoon salt
- 1⁄2 teaspoon minced garlic
- 1.5 (8 ounce) cans canned diced green chiles
- 4 dollops Tabasco sauce
- 1 lb sharp cheddar cheese
directions
- Cook grits in 6 cups water.
- Pour grits into mixing bowl.
- Cut butter in to 6 blocks.
- Pour 5 beaten eggs into grits.
- Add 1 handful shredded cheese.
- Mix and add more butter.
- Add garlic and salt and another handful of cheese, mix.
- Add chilis.
- Add cheese.
- Mix 4 dollops Tabasco.
- Pour all into ungreased casserole.
- Cook one hour to 1 hour 15 minutes.

We enjoyed this casserole; although it was really rich. I think it could definitely be made with much less butter and fewer eggs. This would help the casserole to solidify a bit more. We really liked the addition of the green chilies -- they really gave the casserole a great taste. There was no oven temp given in the recipe, so I cooked it at 350 degrees F. -- it's possible that it should have been higher; perhaps 375. Made for Spring PAC, April, 2013.
