  • Cook grits in 6 cups water.
  • Pour grits into mixing bowl.
  • Cut butter in to 6 blocks.
  • Pour 5 beaten eggs into grits.
  • Add 1 handful shredded cheese.
  • Mix and add more butter.
  • Add garlic and salt and another handful of cheese, mix.
  • Add chilis.
  • Add cheese.
  • Mix 4 dollops Tabasco.
  • Pour all into ungreased casserole.
  • Cook one hour to 1 hour 15 minutes.

  1. We enjoyed this casserole; although it was really rich. I think it could definitely be made with much less butter and fewer eggs. This would help the casserole to solidify a bit more. We really liked the addition of the green chilies -- they really gave the casserole a great taste. There was no oven temp given in the recipe, so I cooked it at 350 degrees F. -- it's possible that it should have been higher; perhaps 375. Made for Spring PAC, April, 2013.
