Grocery Day Chicken Rice Soup

"I go on a big grocery run every month, and this is usually what I make when I come home. It's SUPER easy and quick, and this way my hungry tribe doesn't have to wait too long for supper when I come home with all the delicious food! It's very good for when you need to whip up a satisfying soup very quickly, or if you have leftover chicken you need to use up. All kinds of things can be added based on what your family likes or you have on hand--various vegetables, mushrooms, beans--and this hearty soup is terrific with a crisp salad."

  • 2 (28 ounce) cartons chicken broth
  • 1 (14 1/2 ounce) can sliced carrots, drained
  • 2 cups diced cooked chicken, drained or 2 cups canned chicken, breasts, drained
  • 12 cup minced garlic
  • 2 -3 cups instant rice
  • 1 dash soy sauce (more to taste if you use low-sodium broth)
  • 1 dash cajun seasoning (pref. Tony Chachere's, more if you like it spicy)
  • peppercorn (whole)

directions

  • Combine all ingredients except rice in a large stockpot and heat to boiling.
  • Add rice, simmer 5-8 minutes or until rice is as tender as you like it.
  • Serve! Garnish with a light sprinkling of shredded cheese if desired.

I'm an amateur foodie who loves to cook, something I only discovered in my mid-twenties. I never felt I had an aptitude for it, but when I started experimenting in the kitchen, I soon found I couldn't stop! Both of my parents cook--my father's background is Pennsylvania Dutch, and he (like his own father before him) makes huge pots of soups and stews that are "vonderful good." My mom is from the Deep South, and brought me up to use the Louisiana "Holy Trinity" of bell peppers, onions and celery in just about everything ( http://en.wikipedia.org/wiki/Holy_trinity_(cuisine) ). I have a very adventurous palate and one of my favourite kinds of food is Middle Eastern. For two years, I kept to a vegetarian diet--I don't anymore, but I still don't eat a great deal of meat, especially if it isn't fish or poultry. UPDATE: I'm back on a largely vegetarian kick, supplemented every now and then by a bit of fish. I've just got a fantastic new blender, also, and I'm making heaps of healthy smoothies at home... all fruit will fall to my whirling blades!
