Ground Beef and Shredded Potato Casserole

  • Preheat oven to 450 degrees. Spray a shallow 1 1/2 quart baking dish with vegetable oil spray.
  • In a small bowl, stir together tomato sauce and sugar; set aside.
  • Using your hands, break apart beef into 1/2" pieces; layer into baking dish, leaving slight space between pieces.
  • Sprinkle beef with all-purpose seasoning, basil, cumin, salt, and pepper.
  • Top with garlic, onions, tomato sauce mixture, frozen veggies, and potatoes. Pour water over all. Lightly spray potatoes with vegetable oil spray.
  • Bake, covered, for 25 minutes, or until beef is no longer pink in center and potatoes are tender.

  1. This recipe definitely has potential. I love the shredded potatoes on top instead of mashed and the flavor was good all around. I didn't know what was meant by "sugar syrup" but I commonly put a dash of sugar in my homemade sauce, so I just used a little table sugar. I prefer to drain the fat off the beef instead of cooking it with the rest of the ingredients, so I browned and drained the beef, stirred in everything else and then transferred it to a casserole dish. The top of the potatoes didn't get browned and crispy with the non-stick cooking spray, so for the last 5 minutes I brushed a little melted butter on top and I'll do that again next time. :) Thanks for sharing, Messiejessie!   2. I don't know if I can give this a fair rating because I didn't follow it exactly. I used taco seasoning instead of italian, used fresh chopped up carrots, and I made a few more changes. It was a good base. I didn't add any sugar to my tomato sauce because it wasn't too acidic and didn't need it. Thanks for a good base recipe to add to!
